Urban plant collector and herbalist Victoria Lorenz, with a strong sense for sustainable food, passionately shares her great enthusiasm for edible wilderness in workshops. Her goal is to convey the joy of experimentation, raise awareness of nature and encourage sustainable enjoyment by creating special experiences.

She goes on adventurous forays into urban environments to collect valuable and edible buds, leaves, flowers and roots in all seasons. These serve as inspiration for her creative ideas, be it for wild herb cocktails, a tasty, colorful and versatile plant-based cuisine or even for natural cosmetic products. In order to develop the full taste and health potential of wild plants and vegetables and to have them available all year round, she experiments with traditional cultivation techniques such as fermentation and pickling.

As a Manager in Applied Health Sciences (B.Sc), Victoria, plagued by recurring health problems in her youth, took her recovery into her own hands. Since then, she has been intensively involved with the effects of diet and lifestyle on health. Through her studies in Integrative Health Promotion, she deepened her knowledge, especially in the area of gut health and microbiome. The possibility of influencing the gut flora and thus general health fascinated her so much that she took part in a study with her professor, an expert in this field, and designed a recognized nutrition course for a healthy gut.

In order to put the theoretical knowledge into practice, she began to study fermentation and probiotic foods, essential building blocks for a healthy intestinal flora. She now shares this knowledge in her fermentation courses.
